Giuso Guido is the Italian company that has made excellence, tradition and innovation its primary mission. Founded in 1919 as a small artisanal workshop specializing in Amarena cherries, Jams and Candied Fruit, in over a century it has become an important reference
point for artisans looking for the best ingredients for Pastries and gelato.
Giuso was born making products for pastry and it is in this sector that it roots its history, being one of the first companies to produce candied fruit in the early 1900’s.
From a leader in the processing and marketing of fruit, specifically cherries and sour cherries, in the 1970’s it embarked on its journey into the world of gelato, launching a revolutionary range to produce gelato with real fruit all year round. Forward thinking and
innovation are the winning ingredients of the Giuso recipe.
In the 2000’s, the concept of naturalness led the company to embark on the “purity path”, i.e. to commit themselves every day to the creation of products with natural ingredients without the addition of colouring agents, preservatives, or flavourings, to guarantee an
offer of products with genuine ingredients and excellent performance.
In 2012 Giuso experienced a major turning point, with the move to the Bistagno plant, now one of the most modern and technologically advanced production hubs in the industry.
Since 2018, Giuso is part of Casa Optima, a world-leading Italian group in the production of ingredients for artisanal gelato, excellent pastries, decorations and beverages.
In 2024, the Bistagno plant was equipped with a state-of-the-art photovoltaic system, capable of guaranteeing self-production of electricity needs, equal to approximately 30% of the annual consumption. The investment is part of Casa Optima’s ESG
roadmap, a project inspired by the UN’s 2030 Agenda, and which focuses on 11 of the 17 goals that are most relevant to the business in which it operates and to which it can contribute in a significant and tangible way.
ICONIC PRODUCTS
Pastry:
Giuso cherries and Amarena cherries. The production follows scrupulous rules that the company has developed in over a century: selection of the cultivar’s territorial provenance, careful pitting of the fruit to preserve its integrity, dynamic straining (unlike other
references) that allows the total extraction of the syrup.
Marroni from Piedmont and Naples. Quality Marron chestnuts hand-picked to avoid the bruising of the fruit, slow traditional French-style candying process that allows homogeneous candying to the core. Hand-packed in tins and arranged in layers to facilitate
extraction and to avoid bruising the fruit.
Amordifrutta Line. It identifies the characteristics of absolute excellence in fruit processing made from Fresh Fruit in IQF\without sulphur dioxide\traditional French candying with cane sugar syrup\ without colourings or additives.
Purees and Extra-Fruit Jam Line. The maniacal selection of only the best raw materials and the use of gelling thickeners of natural origin give rise to a product of the highest quality with a wide choice to meet the different needs of any pastry chef. Giuso’s historical
products and pillar lines such as the Oro puree or the Extra-Fruit Jam are still made according to tradition with fresh or IQF selected Italian fruit, cane sugar, natural and high-performing pectin.
Gelato:
Cuzco Line. The line with which Giuso has revolutionized the way chocolate gelato is made, by introducing real chocolate into powdered products thanks to an exclusive patented production process. A secret that has enabled artisan gelato chefs to combine the quality
and excellence of ingredients with simplicity of preparation, to always ensure that the gelato is balanced and to guarantee the workability and softness of the gelato in the showcase.
Amordifrutta variegates Line. Highly appreciated on the market for the unmistakable richness in pieces of selected candied/semi-candied fruit, this is a range which includes natural products, without preservatives, colourings and flavourings, or where present only of
natural origin, for a short and clean ingredients list, in line with the principles that have always inspired Giuso.
Gelato dei Ricordi. Flavours from the past, those rich in stories should not be forgotten but savoured again. This line is dedicated to flavours that we re-propose, revisited in a gelato version, the best-loved snacks from our childhood, to sweetly celebrate our most
delightful memories and to transform the showcase into a delicious déjà-vu.
Super premium Coconut paste. One of the best sellers in the Giuso catalogue, it reflects the company’s quality and know-how in fruit processing. A paste with a high coconut content (50%) with the advantage that it can also be used cold, consequently speeding up
production procedures.
