Founded in 2005 as the International School of Gelato, it immediately distinguished itself on the training scene for its extremely innovative approach: the first in the sector to have introduced the one-to-one teaching method with small classes (maximum 12 students), and fully equipped individual workstations to immediately put into practice what is explained by the teacher.
In 2020 it evolved into the Casa Optima School – High performance training in Sweet Arts & Innovation, a training centre of excellence, an international benchmark for those who wish to train in the art of Gelato and Pastry making, Decorations and Beverages.
A reality that today is able to train more than 700 professionals every year through a high-quality service, a team of 40 teachers with international experience, and theoretical and practical courses structured on various levels and subject areas, aimed both at those who want to undertake the profession of artisan gelato maker, pastry chef or bartender, and at professionals that wish to evolve even further.
The school doors in Munich will already be open in September, whereas in Italy, in San Clemente, the school bell will ring in November. That’s why now is the right time to choose what to focus on within the school calendar that is rich, up-to-date and in line with current trends!
The ABC of Gelato is the first level course dedicated to the world of gelato, designed for all those who want to start a professional career in this wonderful sector, with the Art of Gelato you go up to the next level to deepen your technical knowledge. And for all those gelato makers in love with their work, who want to experiment new recipes to offer to their customers, there’s the Master of Gelato.
With the Classics in evolution (level 1) and the Pastry Trends (level2), you enter the heart of the gelato chefs’ pastries, to update yourself on the latest production and presentation techniques, and to enrich the proposals in the showcase.
From passion to business is the management and marketing course for the gelato parlour, to create successful gelato chefs who know how to manage their premises in the best possible way, analysing the aspects of economic management, raw materials, human resources, and marketing.
